  • 1lb either minced lamb or beef
  • medium onions (one thinly sliced, the other to place in a blender) 2
  • medium potatoes (optional) 2
  • heaped teaspoon minced fresh green chillies 1
  • teaspoons minced fresh ginger (plus another 1 teaspoon) 2
  • teaspoons crushed garlic (plus another 1 teaspoon) 2
  • slice of bread soaked in water 1
  • teaspoon salt (or to taste) 1
  • teaspoon crushed black pepper 1
  • teaspoon turmeric (plus another 1 teaspoon) 3
  • teaspoon of garam masala powder 1
  • some fresh coriander chopped
  • tablespoon cooking oil to add in mince 1
  • tablespoons cooking oil to cook with 2
  • 2-3 cinnamon sticks
  • 5-6 cardomon pods, slightly crushed
  • couple of bay leaves
  • Cloves 4
  • Salt & White Pepper
  • Garnish
  • Freshly chopped coriander leaves

  • Method; stage one
  • Into a mixing bowl place the mince and add the following ingredients:
  • chillies
  • ginger
  • garlic
  • salt
  • pepper
  • tumeric
  • garam masala
  • some chopped fresh coriander
  • tablespoon of oil 1
  • mix thoroughly with your hand, blending and mixing all the spices and mince together.

2 In a food blender put in a roughly chopped onion and the soaked piece of bread and give it a blitz until they are pureed. Now add this mixture to the mince. Stir well again and add some warm water as you mix to make the mixture more pasty (if the mixture is too hard and dry you will end up with meatballs that are like bullets!) - but don´t overdo it either. If you are brave enough then you can taste a little of the mixture and add anything that may be required to taste. add the oil and stir well again. Leave to stand and let the flavours develop.

6 In the meantime prepare the ingredients in which the meatballs will be cooked.
7 Pour the remaining oil in to a wide based cooking pot, add the cinnamon sticks, cloves, cardomon pods and bay leaves, let them infuse in the oil on a low heat until you can smell the aromas (not too long) now add the sliced onion and gently fry, stirring every now and then until the onion is slightly golden. Now add 0,25 teaspoon of turmeric, 0,25 teaspoon crushed garlic and the same of ginger. Add a little salt and some powdered white pepper - this is now the basis to the thin gravy that the meatballs will cook in.

12 Method; stage three
13 You now need to take a little of the mixture and make them into little balls and place them into the pan as you go along with the heat turned off. When you have placed all the meatballs into the pan you can relight the gas and gently cook them covered on a low heat for about 10 mins. Now add some warm water - just enough to half cover the meatballs, there will already be some juices released from the meatballs themselves. If you want to at this stage you could also add some diced potatoes and let the whole thing cook again covered until the potatoes are tender. A word of warning though. These meat balls are very delicate you should be careful and stir the dish by lifting the meat balls gently.
14 Sprinkle with some garam masala and freshly chopped coriander leaves.
15 Alka likes to serve the meal with naan, a fresh salad and followed by just plain boiled Basmati rice.
